Tips on Buying Fresh Fish

  • Eyes bright and clear
  • Not sunken, dry without a cheer.
  • Skin is bright, wet and full of light
  • Not dull, dry a fearful sight.
  • Flesh is firm, moist and all intact
  • Not dry or slimy and not so compact.
  • Clean must be the smell of the fish
  • A guarantee for a delectable dish!

Hint: Though they swim in the same sea every fish variety has its own distinct taste.
There is a million and more ways to prepare your fish. Always put the taste of the fish before the spice. Condiments must compliment not overpower.
Keep it simple. Coarse or flaked sea salt and real butter is a necessity and often all you need.
